This spring, MGM once again joins hands with single malt Scotch whisky brand The Macallan to present a limited-time whisky pairing experience at MGM MACAU’s Chinese restaurant Imperial Court from 16 March to 19 April.

The collaboration spotlights The Macallan’s newest release, The Harmony Collection Inspired by Phoenix Honey Orchid Tea. Homan Tsui, Executive Chef of Chinese Cuisine of MGM MACAU and the chef who leads Imperial Court, incorporates the whisky into four crafted dishes, presenting layered flavors where refined Lingnan cuisine meets the artistry of Western whisky-making.

The menu includes Marinated Sliced Sea Whelk with The Macallan and Spicy Sauce, which boldly replaces traditional rice wine with whisky; Steamed Grouper Fillets with Egg Custard, Rolled with Walnut and Ham with The Macallan, pairing leopard coral grouper with toasted walnuts; and Phoenix Dancong Tea Smoked Wagyu Beef Cheek with Chinese Pickled Cabbage and The Macallan, finished tableside with a pour of whisky that releases aromas alongside oolong tea leaves and green peppercorns. To conclude, Roselle Jelly with The Macallan combines the tart brightness of roselle with crystal-clear jelly and a whisky-infused brown sugar syrup.

In addition, Bar Patuá will introduce two exclusive cocktails: Honey Orchid Breeze, highlighting the honeyed sweetness and orchid-like aroma of Phoenix Honey Orchid tea; and Whispers of Spring, showcasing whisky’s elegant richness with apricot-led notes that echo the spirit of spring.
Inspired by Phoenix Honey Orchid Tea, this expression from The Macallan Harmony Collection is a cross-industry creation with the prestigious British tea house JING Tea, celebrating the harmony of tea fragrance and whisky aroma.
