Two Michelin-starred restaurant Sushiyoshi debuts at MGM COTAI

  • Chef Hiroki blends classic Edomae technique with an inventive, contemporary Omakase (chef’s choice) format.

On 5 February, MGM held the grand opening of acclaimed two-Michelin-starred restaurant Sushiyoshi at MGM COTAI. Hailing from Osaka, the restaurant is led by Chef-Owner Hiroki Nakanoue, celebrated for his “creative sushi” philosophy.

In Macau, Chef Hiroki blends classic Edomae technique with an inventive, contemporary Omakase (chef’s choice) format, delivering a dining experience that is as visually striking as it is flavorful, while adding fresh energy to the city’s international culinary scene.

Chef Hiroki said, “Macau is where East meets West, a spirit that mirrors Sushiyoshi’s drive to push boundaries. I look forward to combining Japanese craftsmanship with modern aesthetics, incorporating local touches and showing the many possibilities of sushi.”

Steamed Fukuoka Tilefish and Kyoto Turnip

Seasonality anchors the menu. Seafood and produce are air-flown from Japan and paired with premium European and local ingredients to build layered tastes and textures across each course. The debut winter selections include Fukuoka Mackerel with Tofu Toast, Deep-fried Shrimp-shaped Taro with Hokkaido Sea Urchin, and Aomori Oma Tuna Sashimi. Signature indulgences such as Foie Gras Ice-Cream with Caviar complement a rotating lineup of seasonal nigiri, including Chiba Alfonsino, Okayama Oyster and Saga Gizzard Shad.

Set within the Emerald Lobby, the restaurant fuses Sukiya-zukuri architecture with kare-sansui garden calm. Warm timber tones frame an open sushi bar carved from a single rare hinoki plank, encouraging close chef-guest interaction. Contemporary artworks by Hsiao Chin and Macau artist Eric Fok add cultural dialogue, while a six-seat private room offers discreet dining.
